Carry Me Away Cashew Stuffing


Get carried away with this grain free, super flavorful, plant based stuffing roasted with caraway seed! It's the easiest way to sneak in those veggies as you're stuffing your face with wine and desserts.

Serves 6-8

Ingredients

1 head of cauliflower, chopped into florets 1 head broccoli, chopped into florets 2 apples, medium diced 1 small onion, medium diced 4 garlic cloves, minced 4 celery sticks, chopped on a bias medium cut 1 container or 2 cup mushrooms, chopped in half 1 cup cashews 1 tablespoon caraway seed 1 1/2 teaspoon Himalayan salt 1 teaspoon black pepper Zest and juice of one lemon 2 tablespoons olive oil 2 tablespoons white or cider vin

Method 1. Prepare and prep all vegetables listed as above 2. Spray a baking sheet with cooking spray or spread olive oil on the pan (enough to coat the entire pan) 3. Place all of the veggies on the pan and toss and mix with caraway seed, salt, oil, and vinegar 4. Place in the oven and roast for 15 minutes. 5. With oven gloves, pull pan out of the oven and toss in cashews and lemon zest and juice. 6. Place back in oven for another 10-12 minutes. 7. Garnish with fresh chopped parsley or sage (optional)
