Superfood Zucchini Crunch
INGREDIENTS FOR SALAD 2 zucchini, sliced in a zoodler/spiralizer
1 head cauliflower, chopped small - feel free to use broccoli or asparagus as a substitution
2 different colored bell peppers, sliced in thin strips 1 bag of spinach leaves or arugula

One Pan Spring Chicken
Ok Sassy Fam! This recipe yields about 4 servings. It takes 15 minutes to prep and 45 minutes to roast in the oven. In total, the recipe takes about an hour to make. It may seem long, but once it's in the oven you are free to do as you please - housework, workout, study, other meal prep, nap.... ya know, normal life stuff! My favorite thing about these decadent cupcakes is that there is no MIXER required! Most baking recipes involve hand-held, or stand alone mixers, but this recipe just requires the mixing process to happen between 2 bowls! Less equipment equals less mess! Get to it sassy friends!
