When Pumpkin Spice is Actually Cool.

What kind of foods do you absolutely despise? Let's be real, we all have preferences. Surprisingly enough, there are only a handful of foods that I don't like. Let's start with the most obvious:

1. Fast food/processed foods. Can we even call that food? Am I right?

2. Trendy foods like pork belly, ramen, and toast with toppings. The only affinity I have with pork belly and ramen is that I grew up eating it. However as of late, I'll pass on the Insta trend (unless I'm super craving it).

3. Pumpkin Spice. Ok, I'm not being 100% honest because I do enjoy traditional pumpkin pie on Thanksgiving, however I'm not a fan of pumpkin spice lattes, pumpkin flavored oreos, pumpkin inspired dish soap (not even lying, they make this), etc. I know Pumpkin Spice only comes once a year, but it's obnoxious.

The ironic thing about Pumpkin spice is that everyone LOVES it! So who am I to deny what the public wants? Because I love to make people happy, I’ve created a sweet tooth dish that contains pumpkin AND protein, without the junk of course! It’s functional, it’s delicious, and you can eat it for breakfast or whenever you’re craving something sweet! Cool, right?

Morning Glory Pumpkin Protein Cake

Yields: 8

CAL 219 | CARB 15 | FAT 13 | PROTEIN 15

Ingredients

2 cups almonds (or 1 cup of almond butter)

A pinch of Himalayan salt

4 tablespoons water

2 cups pumpkin puree

2 teaspoons of sassy baking spice (a blend of nutmeg, cinnamon, cloves, and ginger powder)

4 scoops protein powder

4 tablespoons of cocoa powder

Tools

Food processor

8 Inch square baking pan

Parchment paper

Method

  1. Preheat your oven to 350 Degrees.

  2. In a food processor, blend almonds and water until it forms a paste

  3. Add the rest of the ingredients one a time, pulsing and blending until well combined. You will need a spatula to scoop the sides of the food processor.

  4. Line the 8 Inch square baking pan with parchment paper. Pour the cake mixture into the pan. Smooth it out with a spatula.

  5. Bake for 25-30 minutes in a 350 Degree oven. Fyi, the toothpick trick applies to clean-eating cakes as well!

Optional Garnishes:

Banana slices

Raw nuts of your choice

Cinnamon sprinkles

Maple syrup drizzle
