One Pan Chicken with Asparagus, Brussels Sprouts, Pine Nuts, and Parmesan!

Are you ready for one of the easiest meal prep dishes of all time? Are you in need of a healthy and nutritious dish that is packed with flavor and requires minimal chopping?

Well, here it is! Just PLEASE be sure to include the pine nuts and parmesan on this recipe! It won't be as tasty without it! This dish goes great with fluffy white or brown rice!

YIELDS: 4-6

Ingredients

1 bunch of asparagus, chop an inch off the bottoms 1 bunch of brussels sprouts 1 medium yellow onion, quartered, divided 6 cloves of garlic, minced 2 pounds of chicken thighs, fat trimmed and chopped in chunks 1 1/2 tablespoons Himalayan salt, divided 1/2 teaspoon black pepper 3 tablespoons of sugar-free rice vinegar 2 tablespoons olive oil 1 lemon 2 tablespoons of pine nuts 2 tablespoons of parmesan cheese (optional but it adds a super nice flavor) Method 1. Preheat the oven to 425 degrees. 2. Prepare the onion, garlic, asparagus, and chicken as listed above. 3. Place all of the ingredients in a large bowl except for the lemon, pine nuts, and parmesan. Mix everything together until well-combined. 4. Place a piece of parchment paper on a large sheet pan. Place all of the contents of the bowl on the pan and spread them out evenly. 5. Using a microplane, take your lemon and zest the lemon all over the ingredients on the pan. Be sure to only zest the yellow part of the skin. After the lemon is fully zested, slice the lemon and place the slices on top of the contents of the pan. 6. Roast in the oven for 25 minutes. 7. Pull out the lemon slices and garnish the dish with pine nuts and parmesan. Serve immediately.
