Hey Sassy Fam! A few tips before we start…..
You don’t need to use blueberries. If you have strawberries, raspberries, or blackberries laying around those work too!
If you want to go as low-carb as possible, my suggestion is to use almond or cashew butter.
Lemon zest is truly the best way to achieve the lemony flavor! Lemon juice isn’t good enough alone!
2 tbsp fresh peanut butter/almond butter/cashew butter/etc…
2 tbsp coconut flour
¼ teaspoon baking powder
1 ½ tbsp. coconut oil
1 ½ tbsp. maple syrup
Zest of one lemon
5-6 blueberries or raspberries
Mix all of the ingredients into a bowl except for berries. Mix until it is well-combined and forms a dough.
Place the cake dough into a mug. Fold in the blueberries.
Microwave on high for 90 seconds.
