Cake in a Cup!

Hey Sassy Fam! A few tips before we start…..

  1. You don’t need to use blueberries. If you have strawberries, raspberries, or blackberries laying around those work too!

  2. If you want to go as low-carb as possible, my suggestion is to use almond or cashew butter.

  3. Lemon zest is truly the best way to achieve the lemony flavor! Lemon juice isn’t good enough alone!




2 tbsp fresh peanut butter/almond butter/cashew butter/etc…

2 tbsp coconut flour

¼ teaspoon baking powder

1 egg

1 ½ tbsp. coconut oil

1 ½ tbsp. maple syrup

Zest of one lemon

5-6 blueberries or raspberries



  1. Mix all of the ingredients into a bowl except for berries. Mix until it is well-combined and forms a dough.

  2. Place the cake dough into a mug. Fold in the blueberries.

  3. Microwave on high for 90 seconds.

  4. Enjoy!
