Hey guys! These clean-eating cookies are fantastic! I would suggest to make a double batch and freeze half! They go quick and I promise you that you wished you had more on hand! Feel free to bring a batch to your next party or just have them at home with your loved ones! Enjoy!
2 medium eggs or 1 large egg
3 Tbsp of Truvia or Stevia
3 Tbsp natural peanut butter
2 cups almond flour
1/4 teaspoon Himalayan salt
½ teaspoon baking soda
¾ cup dark chocolate chips
2 Tbsp coconut oil
Preheat oven to 375 degrees.
Place parchment paper on a baking sheet.
Combine egg, coconut oil, and truvia/stevia in a large bowl and mix until well combined.
Combine almond flour, salt, and baking soda into another bowl and mix until well combined.
Place the almond flour mixture in with the egg mixture and mix thoroughly until ingredients mesh together. Fold in the peanut butter and mix even more until the peanut butter is well distributed throughout the cookie dough.
Fold in the chocolate chips and mix.
Take tablespoon size scoops and space them evenly onto the baking sheet – about a 2 finger distance in between each cookie. The dough may feel a bit crumbly, but that’s ok, we want it to be that way. Feel free to pile up a tablespoon and half of dough together so they resemble drop cookies.
Bake in the oven for about 9-10 minutes. Cool for 10 minutes prior to serving time.
Store in a cookie jar or container with a tight fitting lid.
