If you're not a fan of coconut, don't worry, you don't have to add it in. The recipe will still turn out Sassy AF.
1 cup almond flour
1 tablespoon of Truvia
1/3 cup coconut oil
2 tablespoons water
4 egg yolks
2 tablespoons fresh grated ginger or 2 teaspoons powdered
3/4 cup plus 1 tablespoon Truvia
Zest and juice of 2 lemons
4 tablespoons coconut oil
1/2 cup unsweetened coconut
Preheat oven to 350 degrees
Combine all of the crust ingredients in a food processor and blend until well combined.
Spray or line a square 8 inch pan with parchment paper. Press the crust into the pan.
Bake the crust for 15 minutes.
Place all of the filling ingredients, except for coconut, in a sauce pan. Place pan over medium-high heat. Be sure to constantly stir the filling with a whisk until the filling thickens. May take anywhere from 6-10 minutes.
Fold the coconut into the filling.
Pour filling onto the crust.
Bake in the oven for 25 minutes.
Cool for 15 minutes before refrigeration.
Place bars into refrigerator for at least an hour or until solid before serving time.
Cut in squares. Store bars in refrigerator.
