Are You Sick? This Soup Is! Sassy Sausage and Greens Simmered in Bone Broth.


If you're sick, you need to make this sick soup! Sick as in cool, I mean! Cool as in it takes less than 30 minutes to make and it's an easy recipe to follow. It's made with fresh ingredients like garlic, onion, and jalepeno that help boost immunity. It's packed with protein including organic sausage and kale, AND it's made with bone broth! Bone broth quickens recovery, combats fatigue, and heals the gut! It also happens to be very delicious! I whipped up a batch last week, definitely blog post worthy!

Time: 30 Minutes Yields: 3-4 Servings

KETO & PALEO

Ingredients

2 quarts of chicken bone broth (I used Pacific Organic Brand)

2 cups water

3-4 Kiolbassa smoked meat sausage links (San Antonio local but you can use whatever is local to you), cut on a bias – sliced in pieces

3 garlic cloves, minced

1 small onion, diced

2 roma tomatoes, diced

1 small jalepeno diced

1 cup of spinach

1 cup of kale

½ cup cilantro

1 small lemon, quartered

1 tablespoon of coconut oil or avocado oil

Himalayan Salt and Pepper to taste

  1. Prepare ingredients as listed above – chop the veggies, meats, etc…

  2. Take a large soup pot and place it over medium to high heat. Once the pan gets hot, add the oil and lift the pan by the handle to coat the bottom of the pan.

  3. Add the onion, garlic, and jalepeno. Stir and sauté until it becomes fragrant and the onion is translucent. Add a pinch of salt and pepper.

  4. Add the sausage until it becomes caramelized (maybe 6-7 minutes).

  5. Add the tomatoes and sauté for another 3 minutes or until the tomatoes become soft. Add a pinch of salt and pepper.

  6. Add both quarts of bone broth plus 2 cups of water. Add a pinch of salt and pepper. Bring to boil. Turn heat to medium-low and simmer for another 10-15 minutes.

  7. Remove from heat. Fold in cilantro, kale, and spinach and allow it to wilt naturally.

  8. Add salt and pepper to taste. Serve with lemon wedge.
